【摘要】 研究了Douglas法测定啤酒及麦汁中的戊聚糖 ,探讨了实验条件。标样的回收率在 91 6 %～ 1 0 3 5 %之间 ,RSD值为 2 6 %。与GC法测定啤酒中的戊聚糖相比具有良好的相关性。用此法测得的市售啤酒中戊聚糖含量在 70 7～ 959ml/L之间更多还原

【Abstract】 Douglas method for determination of pentosans in beer and wort was st uied in this paper.The recovery rate by using this method was within 91 9%～106 9% and the value of RSD was 2 60%.There is a positive correlation between GC me thod and Douglas method.Pentosans content in beer ranged from 707 mg/L to 959mg/ L.更多还原
