大米蛋白质提取技术研究

Study on the Extraction of Rice Protein from Rice Dregs

【摘要】 针对碱法提取大米蛋白的局限性 ,提出了非碱性溶剂逆向提取大米蛋白的思路。结果表明 ,在固液比为 1∶8,温度80℃ ,处理 1h所得到的产品蛋白质含量达 89.5 % ,氨基酸总量达 86 .7% ,蛋白质回收率为 95 .7%。各项指标均优于碱法直接提取工艺。

【Abstract】 In order to prepare rich protein product from rice dregs, alkaline and non-alkaline solvent extraction method were evaluated in light of the content and recovery rate of protein in the product. The result showed that for the non-alkaline method, with the rice dregs and solvent being used in a ratio of 1:8 and operated in 80℃ for 1 hr, the protein contained in the product was 89.5%, and the protein recovery rate 95.2%, which were superior to alkaline method. The product may be called rice protein isolate (RPI).
