低聚原花青素对草莓色素的抗氧化活性研究
Study on antioxidant activity of oligomeric proanthocyanidins in strawberry red pigment
【摘要】 草莓红色素属花色苷类化合物,在酸性条件下相对稳定,光、热对色素具有一定的降解作用.本文采用60%的乙醇溶液从葡萄籽中提取出天然抗氧化剂低聚原花青素,研究了它对草莓色素的抗氧化活性.结果表明,低聚原花青素能抑制草莓色素的氧化降解,具有明显的护色作用,同时还可起到防腐效果.
【Abstract】 The natural strawberry red pigment is a kind of anthocyanin compound.It is relatively stable in the acid condition.The light and heat can decompose the pigment.The OPC’s were extracted with 60% aqueous ethanol from grape seeds and the antioxidation experment results on strawberry red pigment showed that OPC’s can depress the degradation of pigment and has significant protective action and preservation.
