气体成分对冬枣细胞膜和贮藏品质的影响

【摘要】 研究了气体成分对冬枣细胞膜和贮藏品质的影响。结果表明:在贮藏过程中,MDA含量和电导率呈上升趋势,CAT酶活性变化呈双峰曲线变化,O2和CO2浓度越低,越有利于保持CAT酶活性和抑制MDA含量及电导率的上升,有利于维持细胞膜的完整性;维生素C含量先积累后降低,硬度先迅速下降,然后变化不大,最后又迅速下降,脆果率呈下降趋势,O2和CO2浓度越低,维生素C保存率、脆果率和果肉硬度越高。试验结果还表明,3%O2+0%CO2气体条件对维持细胞膜完整性和提高贮藏品质效果最好。

【Abstract】 The effects of O 2 and CO 2 on cell membrane and storage quality of postharvest Zizyphus jujuba cv.Dongzao were studied.The result showed that during storage,malonialdehyde content and the relative electrical conductivity tended to increase.CAT activity varied with the two-peak curves.Lower CO 2 and O 2 concentrations were good at keeping CAT activity and controlling the increase of MDA content and relative electrical conductivity.That is to say,lower O 2 and CO 2 concentra-tions are beneficial to keep the cell membrane intact.Ascorbic acid content firstly rose,then decreased.The flesh firmness rapidly decreased,subsequently had a little change,then decreased rapidly.Crispness rate tended to decrease.Lower were CO 2 and O 2 concentration,higher were the ascorbic acid content ,Crispness rate and flesh firmness.The result showed:3%O 2 +0%CO 2 was the best in keeping cell membrane intact and increasing storage quality.
