【摘要】 随着人们生活水平的不断提高,对食品质量的要求愈来愈高。而气调贮藏是保持植物性食品质量的有效途径。气调贮藏以保鲜效果好、保鲜期长、贮藏损失小和无污染而获得了广泛的应用。分析了食品冷加工原理,阐明了气调贮藏原理,对高温库制冷系统进行了详述,对比了气调库制冷系统与高温冷库制冷系统的不同,为实际设计和使用打下了基础。更多还原
