【Abstract】 Approximate composition in muscles and relative dressed weight were determined in juvenile farmed sturgeon Acipenser schrenckii. The percentage of dressed weight in total body weight was (30.82±1.22)%. Four delicious amino acids aspartic acid, glutamic acid, glycine,alanine, with a content of 5.40%, accounted for 35.84% percent of total amino acid content, while the content of eight essential amino acid accounting for 42.79% in total amino acids for human being was 6.45% in whole muscle.更多还原
