引起红曲色素降解因素的探讨

【摘要】 研究了影响红曲色素稳定的因素,结果表明:红曲色素的热稳定性好;光对红曲色素有很强的降解作用,在日光下放置10d,降解率达到87.6%;在pH在4~10的酸、碱环境中稳定,pH>10时,色素发生很强的碱解,呈黄色;重金属盐对色素有沉淀作用,氧化剂和还原剂对色素有不良的影响,常见的食品防腐剂对色素影响较小.

【Abstract】 Influential factors of red oryzae colouring metter degradntion are studied in this paper. The experimental results indicated:Red oryzae colouring metter has good heat stability; The light has strong degradation action on red oryzae colouring metter. The rate of degradation reachs 87.6% after 10 days in daylight. When pH is in the rang of 4~10, colouring metter is stable. As pH is above 10,it will be deeply alkali hydrolyzed and display yellow. Heavly metal salts have precipitate action on colouring metter. Oxidants and reductants have bad influences on colouring metter.The effect of common aseptics on colouring metter is small.
