食用野生植物中无机元素含量分析
Analysis of Inorganic Elements in Some Wild Vegetables as Food
【摘要】 目的 :探讨食用野生植物中无机元素与人体营养、健康的关系。方法 :采用原子吸收光谱分析法 ,测定野生植物中的无机元素。结果 :车前、荠菜中钙 ( Ca)的含量最高 ,分别为2 5 1 0 0 μg·g-1和 32 65 0 μg·g-1;蒲公英含镁 ( Mg) 35 75 μg·g-1,水芹含 Mg342 5 μg·g-1;水芹的含铁 ( Fe)量高达 30 8.90 μg· g-1。结论 :蒲公英、车前、水芹等几种野生植物中 Ca、Fe、Mg、Mn、Zn的含量较高 ,而且几种野生植物中 Zn/Cu比值均小于 1 1 .4。
【Abstract】 Objective:To explore the relationship between nutrition or health and inorganic elements in some wild vegetables as food. Methods:The flame atomic absorption spectrometry was applied to determine the content of the inorganic elements. Results:The determinated results indicated that the content of the Ca,Fe,Mg,Mn,Zn were very high in these wild vegetables. Conclusion: It is a wide prospect that wild vegetables could be exploited intensively.
