【Abstract】 Autoxidation of lipids is a chain raction of free radical.In the inducing stage,the inducers switching on free radical may be lipoxygenase or photoxidation,but the most is transitional metals.The autoxidation course is usually divided into four stages,the inducing stage is the mark of lipid oxidation stability.Many factors can influence oxidation speed of lipids,but the most important is antioxidant,metals or lipid unsaturated degree.Antioxidants can prolong the inducing stage of lipids.更多还原
