甲壳质作为食用合成色素载体的初步研究
A Preliminary Study on Chitin as a Carrier for Synthetic Food Dyes
【摘要】 报导甲壳质用作食用合成色素载体的研究。试验表明,甲壳质对色素的吸附性能良好。在相同条件下,甲壳质对日落黄的吸附率大于苋菜红。在pH<8时,色素与甲壳质之间结合稳定,pH>8时色素溶出明显增多。亚硫酸氢钠能够还原甲壳质吸附的苋菜红,还原产物只有13.1%溶出,表明色素被甲壳质吸附后,人体对其吸收可能明显减少。以上表明甲壳质适宜作为食用合成色素新型载体用于粮油食品。
【Abstract】 Chitin was examined as a carrier for synthetic food dyes.The dye-binding performance of chitin was satisfying.Sunset yellow was adsorbed more than amaranth under the same conditions.The dye was binded stably below pH 8,but the dye releasing from chitin increased apparently above pH 8.Amaranth adsorbed by chitin was reduced by sodium bisulfite and the reductive products released were only 13.1 percent,indicating that the remains of chitin-absorbed dyes in human body may be decreased greatly .Thus,chitin is suitable as a new carrier for synthetic food dyes in cereal and oil foods.
