高麦芽糖浆糖化工艺的研究
RESEARCHES ON SACCHARIFICATION TECHNOLOGY OF HIGH MALTOSE SYRUP
【摘要】 淀粉乳液化后,用β-淀粉酶一次糖化4h,再用葡萄糖淀粉酶15U/g淀粉二次糖化20min制取高麦芽糖浆,能使糖化时间从原来10h缩短到4.3h,提高了设备利用率,对高麦芽糖浆工业生产有重要现实意义。
【Abstract】 Time of saccharification was reduced from 10 hours to 4. 3 hours when β-amylase was used in first saccharification for 4 hours after amylum emultion were liquefied and glucose amylum added(15U/g amylum) in second saccharification for 20 minutes to prepare high maltese syrup.This technology was important to industry of high maltose syrup, because it was increase the atilizatioratio of equipments.
