元宝枫发酵酸乳加工工艺研究
On Processing Technoloy of Fermented Milk of Acer truncatum Kernel
【摘要】 以元宝枫种仁为主要原料,通过乳酸菌发酵,研制元宝枫酸乳,其最佳工艺参数为:种仁与水的比例为112,奶粉、蔗糖和葡萄糖添加量分别为2%、6%和1%,接种量3%,发酵温度43℃,发酵时间5h。
【Abstract】 A series of experiments have been carried out to make the fermented milk from the kernel of Acer truncatum . The optimum technological parameters are as follows: the ratio of kernel to water 1∶12,the amount of milk powder, sucroce and glucose 2%, 6% and 1%, quantity of inoculation 3%, temperat of fermentation, 43℃, time of fermentation, 5h.
