【摘要】 陕西关中人工栽植的火棘，成熟果实相对含水量、灰分、粗纤维、粗脂肪、可溶性蛋白、有机酸、VC、VE、水溶性果胶、单宁以鲜果计算分别为74．28％，0．50％，8．15％，5．28％，0．016％，0．84％，0．14％，0．0041％～0．0045％，3．14％，0．094％；总糖为5．64％，其中可溶性糖3．80％，还原性糖3．08％，蔗糖0．47％，果糖1．45％，葡萄糖2．13％；氨基酸以谷氨酸含量最高达2．368％，其次为天冬氨酸0．887％，精氨酸0．772％，人体必需的氨基酸高达2．26％，婴幼儿必需的氨基酸达0．92％。钙、铁、锌、硒分别为387．5，72．5，16．5，3．5μg／g。火棘果实内不含淀粉，所有有机物的含量均随果实成熟后采摘期的延长而下降。更多还原

【Abstract】 The mature fruits of plant Pyracantha fortuncana in theGuanzhong of Shaanxi province, it’s contents of water relative, ash, crude fibre,crude rouge fat, soluble protein, organic acid VC,VE,soluble fruit glue and tanninare 74. 28%, 0. 50%, 8. 15%, 5. 28%, 0. 016%, 0. 84%, 0. 14%, 0. 004 1% ～0. 004 5%, 3. 14%, 0. 094%. The contents of total sugar is 5. 64%, with solublesugar 3. 80%, restorative sugar 3. 08%, cane sugar 0. 47%, fruit sugar 1. 45%,grape sugar 2. 13%. The contents of all organic substance reduce with lengtheningthe time after mature of frtlit. The Glutamates are found to be the richest 2. 638%,the Aspartat and the Arginine are more rich 0. 887% and 0. 772%. The totalcontents of aminoacid which people need is 2. 26% and the babies need is 0. 921 %. Thecontents of Ca, Fe, Zn, Se are 387. 5, 72. 5, 16. 5, 3. 5μg/g respectively.
