【摘要】 对牛乳酸度的来源及表示方法作了详细的介绍，并对酸度升高影响牛乳的稳定性也作了论述。

【Abstract】 The source and the indication method of acidity in milk are introduced in this paper,and the effect of the acidity rising on the stability of milk is also discussed.
