【Abstract】 Samples of cheese prepared from Yak milk were used to assay the concentra－tions of several mineral elements with atomic absorption spectrophotometer．The resultsshowed that there was a large number of Ca，P，Fe and Zn elements in the cheese．The aver－age content of crude protein 738g／kg cheese.Both protein bands of αs1－ casein and β-ca-sein，were mainly observed on gel plate when PAGE．更多还原
