饴糖在蛋糕中的应用研究
UTILIZATION STUDIED OF MALT SUGAR IN CAKE PRODUCESSING
【摘要】 利用饴糖替代部分蔗糖,研制出一种甜度适宜,保质期长,成本较低,松软可口的蛋糕。
【Abstract】 A part of sucrose was substituted by malt sugar,we studied and produced a kind of high protein cake which had the characteristics of suitable sweetness,long shelf life,low cost,soft and good mouthsensible.
