棒曲霉糖化酶的初步研究
Preliminary Studies on Glucoamylase of Aspergillus clavatus
【摘要】 棒曲霉(AspergilusclavatusDes)HD-11是从绿衣观音土曲中分离得到的,具有较高糖化酶活性的菌株。初步研究结果表明,30℃下,棒曲霉麸曲培养30~40h,其产酶量达到高峰。糖化酶最适作用温度50~60℃,最适作用pH3.0~4.0。糖化酶在45℃以下,pH40~8.0范围内稳定,对淀粉水解程度为79%,产物为葡萄糖、麦芽糖和少量低聚糖。
【Abstract】 spergillus clavatus strain HD-11 was isolated from the Green Kaolinite Koji. When cultured at 30 ℃ for 30 ~40 h in bran medium, its glucoamylase activity got the peak. The optimum pH and temperature for the enzyme were 3~4 and 50~60 ℃ respectively. The enzyme was stable at the temperature below 45 ℃ and the pH varying from 4 to 8. The enzyme can hydrolyse starch into glucose, maltose and small amount of oligosaccharide.
