【Abstract】 The effects of some substances on activity of polyphenoloxidase (PPO) inmango fruits were studied. The results showed that SDS. CuCI, and "rca could activate PPO,some organic acids (malic acid, citrate ) and reductants (ascorbic acid, cysteinc) inhibited theactivity of PPO.
