不同水分、温度条件下CO2浓度对稻谷品质的影响

【摘要】 试验选用当年新收获的稻谷,其水分为12.7%、13.9%和15.1%,在23℃和33℃的恒温室中,将7种不同浓度的CO2气体经减压调湿后通入粮堆。定期取样,测定稻谷的脂肪酸、水溶酸、还原糖、非还原糖、粘度、过氧化物酶和发芽率的变化。试验结果表明,CO2对15.1%水分的稻谷在33℃下储藏的脂肪酸、水溶酸的变化有影响。在本试验中三种水分的稻谷在CO2浓度98%以上,在两种温度下储藏都能够延缓过氧化物酶活性的降低。这些结果说明,CO2对稻谷有一定的保质作用。但对稻谷的还原糖、非还原糖、布拉班德粘度最高值和发芽率没有明显的影响。

【Abstract】 Paddy freshely harvested of 12. 7, 13. 9and 15.1% moisture contents was stored at the contant temperatures of 23 and 33℃. CO2 gas of 7 concentrations was introduced into grain bulk under reduced pressure and tempering. The samples were taken regularly to determine fatty acid, soluble acid, reducing Sugar, non─reducing sugar, viscosity and peroxidase. The results showed that at 15.1% m.c, 33℃,CO, has effect on changes of fatty acide and soluble acid. When 98% CO2 concentrations, paddy of 3 moisture contents was stored at 23 and 33℃,reduction of peroxidase activity was delayed. The effect of CO2 on reducing sugar, non─reducing sugar, the highest value of viscosity and germination was not significant.
