蚕丝固定化脂肪酶催化性能研究

【摘要】 研究了蚕丝固定化脂肪酶对橄榄油的催化水解特性。发现在55℃、pH=8.2的条件下,固定化脂肪酶活性最高。底物浓度高达57%(V/V)时,仍无抑制。适宜的搅拌速度是400~450rpm。在上述条件下,固定化脂肪酶间歇水解橄榄油,重复使用10次水解率从96.5%降至53.0%。间歇水解猪油时的半衰期约为260h。

【Abstract】 The catalyzed hydrolysis of olive oil by immobilized lipase on silk has been studied. The activity of immobilized lipase is the highest at 55 ℃ and pH 8. 2. No inhibition has been found as the substrate concentration increased up to 57% (v/v). The optimal rate of stirring is between 400 rpm and 450 rpm. On the above conditions,the batch hydrolysis of olive oil is catalyzed by immobilized lipase and hydrolysis ratio of olive oil decreases from 96. 5% to 53. 0% after using immobilized lipase 10 times repeatly. The half life of immobilized lipase is about 260 hours when batch hydrolysis of lard is catalyzed by it.
