紫心甘薯红色素的理化性质研究

【摘要】 对紫心甘薯红色素的理化性质作了研究，结果表明其红色素属水溶性色素，且在酸性条件下极为稳定，故有望成为一种新型天然食品着色剂

【Abstract】 The physical and chemical properties of PSP′ s pigments were determined in this paper.The results show the pigments can dissolve in water,be stable in acid solution and be used as a new natural colorant.
