鲜河豚鱼的安全利用研究

【摘要】 为安全开发利用河豚鱼资源,协作组对开发利用过程中的关键技术环节进行了多学科的研究。河豚毒素问接或直接竞争抑制性酶联免疫吸附试验方法(ELISA 法)的应用解决了加工现场河豚鱼毒素快速监测问题。河豚样品毒素提取液稳定性的研究证明,采用乙酸定容法取代 PBS定容法,可大大提高河豚毒素提取液的稳定性。对11种不同种类的河豚鱼的肌肉、肝脏、皮肤等部位进行了毒素含量测定,遘选出可供鲜食的鱼种和可食部位。研究建立的鲜河豚鱼去毒加工工艺流程,经小鼠急性毒性试验及人体试食试验证明,该工艺去毒效果可靠。上述研究结果,为加强河豚毒素的监测和安全利用河豚鱼资源提供了科学依据。

【Abstract】 A multidiseiplinary research project on the safe utilization of puffer fishes and the key technical links for their processing procedures was conducted by a jiont working group for exploiting puffer resources.The problem how to determine tetrodotoxin (TTX) more quickly on the processing site was solved through the application of direct and indirect competitive inhibition enzyme—linked immunosorbent assays (ELISA). The results showed that the stability of TTX while preparing puffer fish extracts could be improved greatly by using acetic acid instead of phosphate—buffer saline (PBS,pH 7.4).The declining of TTX in the ex- tracts was avoided and the method was suitable for on-the-spot surveillance and lot examinations.The toxic- ity of TTX at different parts of puffer fishes,such as muscle,liver and skin of 11 species puffer fishes was also investigated.The species and parts of puffer fishes which are edible in fresh state could be determined and selected.The technological process on detoxification was proved reliable by mice bioassay and feeding trial in human volunteers.This study provided scientific basis for the safe utilization of puffer resources.
