番茄果实生长发育过程中一些有机物质的变化

【摘要】 研究了番茄果实生长发育过程中呼吸强度、乙烯释放情况和糖类、有机酸、色素等有机物的变化,结果表明呼吸强度和乙烯释放量在成型青果期与生理成熟期出现两个转折点;糖类和有机酸在生理成熟期之前逐渐增加,以后则逐渐减少;在未成型青果期,主要含叶绿素,以后叶绿素含量逐渐降低,至生理成熟期,开始出现番茄红素,并逐渐增加,使果实变为红色。

【Abstract】 The present paper describes changes in respiratory intensity, ethylene evolution and contents of carbohydrates,organic acids, pigments in tomato fruits during growth and development. The results of our study indicated that both respiration and ethylene evolution showed two turning points in green fruit period and physiological maturation period.Before the physiological maturation, the contents of carbohydrates and organic acids increased gradually, and then decreased gradually. Before the green fruit period, the fruit contained mainly chlorophyll, which reduced gradually thereafter till the physiological maturation. The fruits became red gradually with the increase of lycopene during the physiological maturation.
