【摘要】 文中系统分析了２３个芸豆不同品种的蛋白质、１６种氨基酸、淀粉、直链淀粉、灰分、ＶＥ和钙、磷、铁含量，并分组进行了统计分析。结果表明：在同一块地上生长的芸豆不同品种，其营养成分有较大的差异，深色种皮组的ＶＥ、Ｘａ、Ｐ含量高于浅色种皮组。蛋氨酸是芸豆蛋白质的限制性氨基酸。更多还原

【Abstract】 The protein. amino acid.starch amylose. ashes、vitamin E、calcium、phosphorus and iron were systematially analyzed in 23 different species kidney beans. The results showed that, the nutrition composition of kidney beans were very different : Kidney beans with dark tasta contain more Ve、Ca、P、than those with lighr one.
