脱水蔬菜干前预处理工艺的试验研究
Experiment and Study on the Pre-dehydrating Treatment Technology for Vegetables
【摘要】 文中介绍了几种典型蔬菜(青椒、尖椒、豆角、胡萝卜)的干前预处理关键工艺(漂烫及冷激)的单因素单指标试验及多因素多指标的组成试验(正交试验),及其结论。
【Abstract】 This paper introduces a conclusion of single and multiple element experiment for the pre-dehydrating treatment technology for vegetables such as sweet pepper, pepper, sword bean and carrot.
