3种规格池养鳗鲡的粗脂肪与脂肪酸测定
AN ANALYSIS ON CRUDE LIPID AND FATTY ACID OF THREE-SIZE CULTURED EELS(Anguilla japonica)
【摘要】 对池养条件下3种规格鳗鲡的粗脂肪含量和肌肉、肝脏的脂肪酸组成进行了分析。结果表明∶鳗鲡的粗脂肪含量随着体长体重的增加而增加。肌肉的脂肪酸共测出16种,其含量除了18∶1ω7ω9、20∶1ω9和18∶2ω6不同外,其余脂肪酸在3种规格鳗鲡间相近。肝脏的脂肪酸共测出15种,其中22∶6ω3含量较高,分别占仔、幼、成鳗多不饱和脂肪酸总量的50.16%、54.87%和51.85%
【Abstract】 The contents of crude lipid and the composition of fatty acid in three size groups of eel were detemined. The results showed that the contents of crude lipid in eel body increased with the growth.16 fatty acids were detected in eel muscles,and the contents of each fatty acid were similar among three size groups of eel except 18: 1ω7ω9,20:1ω9, and 18:2ω6 The contents of 22: 6ω9 were higher in l5 fatty acids of eel liver.The total contents of polyunsaturated fattv acids in eel fry,eel fingerling and adult eel,were 50.16%, 54.87% and 51.85% respectively.
