煎炸油对小鼠骨髓微核毒性的研究

【摘要】 本文采用微核试验方法,对煎炸油的遗传毒性进行了研究。结果表明:煎炸油能引起小鼠骨髓嗜多染红细胞(PCE)微核率增高,并且随着煎炸时间延长,微核率有增高的趋势,而新鲜未加热菜油不能使小鼠PCE微核率增加。本研究提示煎炸使油脂发生热变质,产生一些能使细胞染色体损伤的遗传毒性物质。

【Abstract】 The genotoxicity of fried rape oil was studied by micronucleus test of Swiss-Webster mouse medulla ossium. The results indicated:Fried repeseed oil could increase the percentages of SwissWebster mouse medulla ossium polycychromatic erythrocyte micronucleus,and the percentages ascended with the frying time;whereas fresh repeseed oil didn’t pcassess the above effect to the percentagesof micronucleus. This supported strongly that some genetic toxicant appearsin fried repeseed oil,thusresults in the chromosome aberration.
