【Abstract】 The simultaneous heat and mass transfer model was modified to predict the temperature and moisture distribution in slab-shaped potato during drying. The effects of shrinkage and changes of material properties was considered in the program. The shrinkage experiments show that the thickness changes of potato are linearly correlated with moisture content. The temperature profile was measured by inserting thermocouples at different distances of the samples, the moisture profile was measured by 7 rays transmission method. The predicted and experimental moisture profile and temperature profile in the sample provide a satisfactory agreements.
