婴幼儿食品中铁化学状态分布研究
A STUDY ON THE DISTRIBUTION OFDIFFERENT CHEMICAL FORMS OF IRON IN INFANT FOMULAS
【摘要】 本研究对8种不同婴幼儿食品中以不同化学状态存在的铁进行了定量的分析,其中包括总铁、可溶性铁、不溶性铁、可溶性复合铁、离子化铁、二价铁及三价铁。结果表明,总铁含量为0.206~0.422mmol/100g,其中可溶性铁所占的比例较低,约10%左右,认为相对较高的pH值及VC含量较低是这一结果的主要原因。对于不同的食品,其它化学状态铁所占的比例有所不同。建议食品生产厂家在生产铁强化食品时应充分考虑这些因素。
【Abstract】 ifferent chemical forms of iron(including total.soluble,insoluble,complexed,ionized,ferrous and ferric iron)in 8 infant formulas were de-termined quantitativey.Total iron was 11.50-23.58mg/100g(0.21-0.42mmol/100g),among this,soluble iron was low,only about 10%。It wassupposed that it might be mainly due to high pH and low ascorbic acidlevels of the samples.The distribution of other chemlcal forms of ironwas varied in different formulas.These factors should be taken into ac-count for iron fortification.
