几个啤酒酵母菌株的性能比较
Comparison of Several Yeast Strains Used in Beer Fermentation
【摘要】 对近期引进的四个啤酒酵母菌株进行了形态、生理特征及发酵性能的比较,并进行了实验室小型发酵试验,以期为大生产中酵母菌株的选择提供一定的参考.
【Abstract】 Several brewer’s yeast strains(Saccharomyces uvarum)have been induced.Their morphological,physio-logical and fermentation properties were studied,and their small-volume fermentation tests in laboratory havebeen done.The results may make reference for their further application in brewer factories.
