山胡桃系列纯天然保健饮料开发研究

【摘要】 介绍了山胡桃系列纯天然保健饮料(包括微酸型山胡桃乳,微甜型山胡桃乳及山胡桃晶等)的生产工艺.该保健饮料系采用吉林长白山野生山胡桃果仁为原料加工而成,不含任何香精、色素和防腐剂,在加工过程中保存了原有的有保健作用的营养成分.该系列产品除含有蛋白质、碳水化合物外,还含有40%~50%的脂肪油(主要为不饱和脂肪酸)、维生素E及Ca、P、Fe、Zn、Mg等矿质元素.该产品具有补肾、健脑、黑须发及养气等保健作用.

【Abstract】 In this paper,the technological processes of the series products of the natural walnutnourishing drink(sourish natural walnut milk drink,sweetish natural walnut drink and natural walnutgrain etc.)are introduted.The series products of the natural walnut nourishing drink are refined fromkernels of the natural walnut growing in Changbai Mountain of Jilin Province,without any essence,pig-ment and pesservative,and the original nutritious compositions are conserved during the process. Besidesthe proteins and carbohydrates,these nutritious products contain 40%~50%adipose oil(mainly unsatu-rated fatty acids),vitamin E and some mineral elements such as calcium,phosphorous,iron,magnesiumand zinc etc,.They are efficatious tonics for kidney,hair,brain and vigour.
