【摘要】 食用菌干燥在我国正处于大力发展和进一步提高技术水平阶段。本文从食用菌干燥基本理论（质热基本参数、干燥特性和数学模型）、较优工艺及参数（单一工艺、复杂工艺）、干燥机典型结构类型（强制循环式、垂直通风式、挨向通风式、并流式、隧道式及电子监控应用）等几个方面介绍了当前我国食用菌干燥技术的研究和应用现状，并才今后发展方向提出建议。更多还原
