【Abstract】 The specific weight(4.99),cholesterol content(6.33 mg/ml)and Haugh unit(88.18)ofblue eggs from Jiuyuan Black Fowl were shown to be strikingly higher than those of ISAT breed,whereas their single egg weight was substantially lower,being 52.4g.No appreciable differencewas observed between the two types of eggs in their egg-shape index(1.37)and shell thickness(0.3176 mm).No significant difference existed in single egg weight,egg specific weight,Huagh unit and egg-shape index between the blue-shelled eggs or white -shelled eggs from the JiuyuanBlack Fowl and the white-shelled eggs obtained from the local market. Cholesterol content of theblue eggs showed no marked difference from that of the white eggs from the local market,but washighly significantly higher than that of the white eggs from the Jiuyuan Black Fowl and from ISATbreed.更多还原
