藻红蛋白在微乳液中的增溶溶解
Solubilization of Phycoerythrin in Microemulsions
【摘要】 本文研究了藻红蛋白在油包水微乳液的紫外吸收和荧光光谱。结果表明,含藻红蛋白的阳离子表面活性剂的微乳液的光谱与其水溶液的光谱不同;说明藻红蛋白在这样的微环境中已经变性。与此相反,含藻红蛋白的阴离子表面活性剂的微乳液的光谱与其水溶液的相应光谱的特征峰相同,说明藻红蛋白在阴离子表面活性剂的微乳液中没有变性。本文进一步研究了含藻红蛋白的阴离子表面活性剂的微乳液在不同含水量时蛋白质的稳定性。并根据蛋白质的大小和水团的直径是否匹配及蛋白质与表面活性剂的相互作用解释了这些实验结果。
【Abstract】 R-Phycoerythrin solubilized in "water-in-oil" microemulsions has been investigated by observing the UV absorption spectrum and fluorescence spectrum. The results show that the spectrum of R-phycoerythrin in the microemulsion formed by cationic surfactant is different from that in aqueous solution.These phenomena imply that the protein has been denatured in this microenvironment.In contrast to the above observation the spectrum of R-phycoerythrin in the microemulsion formed by anionio surfactant is similar to that in aqueous solution,suggesting that R-phycoerythrin may maintain its activity in this microenvironment.The effect on the protein stability by varying the amount of water in the microemulsions formed by anionic surfactant has been studied and these results discussed in terms of the match of the protein’s dimension with the water pool’s diameter and the interactions of the protein with the surfactant.
