苹果渣含水量及搅拌速度对固态酒精发酵的影响

【摘要】 苹果渣固态酒精发酵在40升容量卧式反应器中进行条件是,30℃恒温,渣含水量77%和85%,搅拌速度分别2、20和40转/分。其结果是含水量85%的苹果渣发酵获得的平均最大酒精浓度为19.26%,高于含水量77%的苹果渣(酒精浓度为18.10%),搅拌速度为2,20转/分时获得酒精浓度分别为10.79%和10.27%,高于40转/分时的酒精浓度9.30%,且获得最大酒精浓度所需时间少。

【Abstract】 Solid state ethanol fermentation was conducted on apple pomacc in 401 capac- ity horizontal batch reactor at 30℃ using apple pomace contents of 77 and 85% wb.mixing speeds of 2,20 and 40 rpm.A higher mean maximum ethanol concentration of 19.26% db was obtained at 850% wb moisture,whereas a mean ethanol of 18.10% db was produced at 77% wb pomace moisture.Mean ethanol concentrations during fermentation of 10.79 and 10.27% db,at biorcactor nixing speeds of 2 and 20 rpm,respectively,were significantly higher than the corresponding values of 9.30% db ob—tained at 40 rpm mixing speed.Max imum ethanol concentration were attained earlier at 2 and 20 rpm than at 40 rpm.
