大豆种皮中膳食纤维与Fe(Ⅱ)、Zn(Ⅱ)、Mg(Ⅱ)、Ca(Ⅱ)作用的数学描述和动力学模型
The Kinetic Model of the Interaction between Soybean Hull Dietary Fiber and Fe(Ⅱ),Zn(Ⅱ),Mg(Ⅱ),Ca(Ⅱ)
【摘要】 本文对来源于大豆、大麦种皮中的膳食纤维与Fe(Ⅱ)、Zn(Ⅱ)、Mg(Ⅱ)、Ca(Ⅱ)等二价阳离子的相互作用规律作了数学描述;提出了其动力学模型,给出了模型中各必要的动力学参数。本文还比较了来源于大豆和大麦种皮中膳食纤维与矿物质的作用规律,在理论上阐述了大豆种皮中的矿物质具有独特的良好生物吸收性的原因。
【Abstract】 The interaction laws between dietary fiber and minerals such as Fe (Ⅱ),Zn (Ⅱ),Mg (Ⅱ), Ca (Ⅱ) were described in this paper. A kinetic model was set up and some key parameters had been carried out. A comparation between dietary fiber coming from soybean hulls and that from barley hulls was studied in this way, the well bioavailability of minerals in soybean hulls was explained theoretically.
