烹饪油油烟凝结物刺激大鼠腹腔中性粒细胞产生活性氧损伤膜的研究

【摘要】 抽油烟机收集烹饪植物油油烟凝结物,以高速分散器处理为油、水乳浊液,其丙二醛含量显著增高,以此刺激的大鼠腹腔中性粒细胞化学发光明显增强。DPH和N-(3芘)马来酰亚胺标记刺激的中性粒细胞和细胞悬液中存在的微粒体膜脂,膜蛋白质、荧光偏振度均显著增大。揭示凝结物乳液可刺激中性粒细胞呼吸爆发产生活性氧引起自身及基质中膜系统的脂和蛋白质损伤。

【Abstract】 The cooked oil smoke condensate was collected by collector in the kitchen and emulsified to become emulsion-in water. The poroxidatioc product malondialdehyde (MDA)in the condensate omulsion-in water was higher than in the fresh oil,and the che-miluminescence intensity of neutrophils respiratory burst of rat stimulated by the condensate emulsion-in water was stronger than neutrophils unstimulated or stimulated by fresh oil emulsion-in water. The fluorescence polariztions of 1, 6-diphoqyl-1, 3, 5-hexatriane (DPH) and N- (3-pyrene) malemide [N(3P) M] respectirely labelled in the membrane lipid domain and protein of neatrophils and microsomes which were simulated by condensate emulsion-in water were larger than iq the membranes which were stimulated by fresh oil emulion-ix water or unstimulated. The results were showed that the cooked oil condensate can stimulate respiratory burst of neutrophils to produce reactive oxygen special, then tke toxic oxygens can couse the lipid aqd protein injury of self-neutrophils and other call membranes.
