烹调对烟烘粮食中亚硝酸盐和硝酸盐含量的影响
Effect of Cooking on the Content of Ntrite and Nitrate in Smoked Cereals
【摘要】 亚硝酸盐和硝酸盐是常见的化学毒物、致突变物,也是亚硝胺的致癌前体物。本文利用其水溶性及加热降解作用,结合生活实际,应用于烟(?)根食加工,淘洗以及烹调中,作为减毒方法,取得明显效果。实验结果表明烟(?)粮食对人体致癌危险性远小于生吃粮食的实验动物。
【Abstract】 Nitrite and nitrate are common chemical toxicants, mutagens and the precursors of nitros amine.This paper studied the effect of cooking、washing and processing the content of nitrite and nitrate in smoked cereals. It was found that processing, washing and cooking could reduce significantly the level of nitrite and nitrate in smoked cereal, further more reduce the risk for human.
