【Abstract】 Fast atom bombardment mass spectrometry (FABMS) has been used to analyze the complex triglycerides in oils and fats of juglans mandshurica maxin. This method provides not only the molecular weight and the basic information about components of oils and fats (but also the distribution and content of fat acids which are made of different number on carbon and the number of average double bonds in the triglycerides can be calculated by means of data processing. It is fairly satisfactory to compare the FABMS results with those determined and referenced by GC and GC/MS . But this method does not provide the positions of double bonds in triglycerides.更多还原
