谷物硬度研究:Ⅰ.小麦硬度——抗粉碎硬度指数测定法
【摘要】 本项研究建立了一种应用国产 FSF 微型谷物粉碎机进行小麦硬度测定的新方法。实验结果表明,当采用刀片间距为0.65毫米、筛网为50×50目/英寸、粉碎时间为40秒、试样重量为25克时,小麦硬度分辨率和测定重现性均优于 Brabender 微型小麦硬度仪。该方法与现有的小麦硬度测定方法相比,具有测定准确、简便、快速、仪器价格低等优点。本研究中亦对小麦水分和测定环境温度对小麦硬度测定结果的影响进行了实验测定。
【Abstract】 With a FSF micro grain pulverizer(cutter/hammer type),a new wheat hard-ness determination method was established.Results indicated that,with selected cutterclearance(0.65mm),sieve opening(50w),grinding time(40s),and sample size(25g),theresolution and reproducibitity of the new method were higher than those of BrabenderAutomatic Micro—hardness Tester(one—step).Compared to the presently availablemethods,it has the advantages of low instrument investment and easy operation.Theeffect of sample moisture content and testing temperature were also studied.
