培养热带假丝酵母提高酶解玉米粉的营养价值
IMPROVEMENT OF NUTRITIONAL VALUE IN ENZYMATICALY HYDROLYZED CORN MEAL BY CANDIDA TROPICALIS
【摘要】 10g玉米粉在500ml的三角瓶中与200ml Na2HPO4/KH2PO4缓冲液(1/15M,pH6.81,含草酸铵0.6%,MgSO4 0.01%,FeSO4 0.002%)混匀,在接种热带假丝酵母B020的同时加入α-淀粉酶1.5g,在摇床中30℃,120r/min通气培养3天,蛋白质含量从8.4%提高到23.4%(P<0.005);硫胺素含量从0.383mg/100g提高到0.767mg/100g(P<0.005);核黄素含量从0.124 mg/100g提高到0.233mg/100g(P<0.05)。蛋白质中赖氨酸含量从32.1mg/g提高到67.5mg/g;色氨酸含量从8.5mg/g提高到12.7mg/g。
【Abstract】 10g corn meal was mixed with 200ml Na2HPO4/KH2PO4 buffer (1/15M, pH6.81, containtng ammonium oxalate 0.6%, MgSO4 0.01%, FeSO4 0.002%) in a 500ml flask, then was inoculated with Candids tropicalis, and 1.5g α-amylase was added at the same time. The substrate was cultivated in a shaker at 30℃, 200r/min for 3 days. The protein content increased from 8.4% to 23.4% (P<0.005); thiamin from 0.38mg/100g to 0.767mg/100g (P<0.005); riboflavin from 0.124mg/100g to 0.223mg/100g (P<0.05). Lysine content in the protein increased from 32.1mg/g to 67.5mg/g; tryp-tophan from 8.5mg/g to 12.7mg/g.
