【Abstract】 This survey collects the academic knowledge structures of 73 food hygiene supervisor,which shows that both their personal and group academic knowledge strctures are not rational.Most of them need such knowledge as law,construc- tion,administration,epidemics,food hygiene and nutrition,food processing and so on.So selective training to the super- visor should be strengthened,because it is quite necessary to improve their knowledge structure.更多还原
