苹果高压电场处理保鲜技术的研究

【摘要】 本文研究了苹果高压电场处理常温保鲜技术。通过实验筛选出了最佳处理强度和处理时间,并对最佳处理组和对照组的苹果进行了生化指标测试。实验说明,苹果经一定强度的直流高压电场处理后,有明显的保鲜效果,是苹果常温贮藏的一种方法,对其它水果和蔬菜的常温保鲜也有一定参考价值。

【Abstract】 High tension electric field treatment as a method for apples to be kept fresh at normal atmospheric temperature were studied. The optimal intensity and time of the treatment were selected after experiments. The biochemical indices of the apples in the optimal treatment group and control group were tested. The results showed that apples treated with a given intensity of direct high tension electric field for proper time have elongated the shelf-life for about 20 days more than the controls. The melhod could be used for preservation of other fruits and vegetables.
