走向21世纪食品技术的课题
New food techniques in the 21th century
【摘要】 迎接21世纪,今后十年间,日本人的饮食生活将发生怎样的变化呢?适应社会环境的变迁,应运而生出现了许多新食品,而且形成了与此相关的具体化技术。本文介绍了面向21世纪,目前正在开发的食品技术并展望其前景。
【Abstract】 Towards the 21th century, how can the diet of Japanese change along with the social environment changing in the next ten years? There will be many new foods, and meanwhile related paticular techniques will be conformed also. In this paper, the new food techniques which are being developed now are reported and the future is forecast.
