快速预测中国商品小麦食用品质方法的研究
SIMPLE AND FAST TESTS FOR ASSESSING FOOD QUALITY OF CHINESE COMMERCIAL WHEAT
【摘要】 本文对中国主要省、自治区的小麦样品进行了一系列品质分析,得到了小麦及其制粉的各项品质指标与食用品质之间的关系。研究结果表明:用小麦粗蛋白质含量和全麦粉SDS沉降值两项指标,能很好地快速预测中国商品小麦的食用品质。
【Abstract】 Wheat quality of the main provinces in China have been investigated. The relation between wheat or flour protein content, SDS-sedimentation, farinogram or extensogram dough characteristics and breadmaking quality were studied. The results showed screening tests based on the wholemeal SDS-sedimentation test and wheat protein would be adequate for predicting the foodmaking quality of Chinese commercial wheat.
