【Abstract】 The following article presents the experimental data concerning the electrical properties of orange juice treated with nltraviolct rays changing with variation of their acidity and lime. On the basis of qualitative analyses of the experimental results and by using the theory of velocity reaction, the relationship between the orange’s resistance and its acidity and time is microcosmically explained from the angle of statistical physics and analyzed quantitatively so as to lay tin initial theoretical foundation of orange testing through physical means.更多还原
