再论小麦长期贮藏品质劣变生化指标

【摘要】 对1978—1981年搜集到的不同贮藏年限的地下仓样品47个,房式仓样品60个所测定的有关面团流变学特特的数据,进行综合统计分析,其结果是地下仓储小麦的粉质与比值呈二次曲线回归关系,与房式仓情况大致相似,但地下仓储小麦品质优变情况较房式仓为好,其优变速度则较房式仓缓慢.认为,地下仓适于更长期贮藏小麦,且品质大大改善.在此次所得综合曲线中,房式仓的全部及地下仓的大部分都在样品实测数据范围之内,因此,所得结果更接近真实.本文对面因流变现象的本质——面筋蛋白质的化学变化情况作了进一步讨论,最后提出了一些尚须解决的问题.

【Abstract】 A comprehensive statistical analysis of the rheological data of the doughs from 47 Kinds of wheat samples in underground bins and 60 kinds of wheat samples in warehouses for different periods of storage, which have been collected during 1978-1981 by Mr Qin Liqian, Mr.Hu Gendong et al, shows that the relationship between the flour quality of the wheat in underground bins and its specific value is Something like a double-curve regression, and the same is true of the cose in warehouses. The wheat quality improvement of underground bins is more noticeable than that of warehouses, but the process of its improvement is less speedy. Accordingly, we have come to the conclusion that underground bins are more suitable to store wheat for a long period of time with a marked improvement in its quality.The combined curve mentioned abore is within the scope of the obtained sample data, wholly in the case of Warehouseswhile considerably in the case of underground bins, so the result is closer to reality.This paper provides a fu ther discussion on the nature of the rheological phenomenon of doughs chemical changes of protein in gluten and at the Same time, Poses some problems which still need to be solved.
