【Abstract】 The present paper gives a brief review of the typical researches on the ageing of rice. The cell wall structures of fresh-harvested and long-stored rices are explored at the molecular level. It is deduced that phenolic acids play an important role in determining the cell wall structures. Some new ideas have arisen from it as the ageing mechanism of rice is considered.更多还原
