延缓馒头老化方法的研究
A Research into How to Keep the Ageing of Steamed Bread at Retard
【摘要】 从国内外常用的十一种乳化剂中,通过与其它添加剂的单项和混合试验,筛选出延缓馒头老化效果明显的种类及其混合使用的配方.
【Abstract】 Out of the eleven emulsifying agents commonly used at home and abroad, we have succeeded in picking out the one which is most effective in retardation of the ageing of steamed bread and its composite formula through the test of mixing it with the other additives separately or com-binatively.
