磁场处理对麦类、大豆籽粒蛋白质营养价值的影响

【摘要】 经磁场处理种子收获的麦类、大豆籽粒的蛋白质、氨基酸含量,结果表明,处理后的麦类、大豆籽粒蛋白质和必需氨基酸含量分别比CK增加1.3~2.0%、1.4~42.1%。用FAO/WHO计分模式评价籽粒蛋白质营养价值,发现经磁场处理的麦类、大豆籽粒蛋白质分(氨基酸分)比CK提高,限制性氨基酸(LAA)分由0.38增加到0.47。

【Abstract】 The content of protein and essential amine acid (EAA) in harvested grains of wheats and soybean treated in magnetic field was found to be 1.3~2.0% ane1.4~42.1% higher than that of the check, respectively. The nutritive value of grain protein was evaluated with scoring pattern of FAO/WHO. It showed that the protein(amino acid score)of grains of wheats and soybean treated in magnetic field washigher than that of the check. Limiting amino acid(LAA)score of wheats increased from 0.38 to 0.47. It is concluded that magnetic field treatment can be used in yeild as a means to increase nutritive value of protein in grains of wheats.
